Jim Beam BBQ Potato Skins

Classic loaded potato skins filled with bacon, scallions, sour cream, and cheese, sprinkled with Jim Beam Original Barbecue Rub for a delicious barbecue bourbon flavor.

Ingredients
4 each Idaho Potatoes
2 oz Vegetable Oil
to taste Salt and Pepper
8 strips Bacon, cooked
1/2 cup Sour Cream
1/2 cup Scallions, sliced
1 cup Cheddar Cheese, shredded
4 Tbsp Jim Beam Original Barbecue Rub

Directions
- Slice or the skins of the potatoes leaving about 1/2 inch of “flesh” attached to the skin. Using a spoon remove a little of the flesh to form a “boat”.
- Rub the “boats” with vegetable oil and season with salt and pepper.
- Roast the “boats” in a 400°F oven until tender.
- Fill each skin with an equal portion of bacon, cheese, and scallions and return to oven until cheese is melted.
- Top each “boat” with a spoonful of sour cream and sprinkle with Jim Beam Original Barbecue Rub.
