Jim Beam Bourbon Sweet Potatoes

Sweet potato wedges tinged with bourbon and even more sweetness.

Ingredients
3 lbs Sweet potatoes, peeled, cut into eighths lengthwise
3 Tbsp Vegetable Oil
1/2 cup Jim Beam Pancake Syrup
2 Tbsp Jim Beam Original Bourbon
to taste Salt and pepper
2 oz. Butter

Directions
- Toss potato wedges in vegetable oil and season with salt and pepper.
- Place in a baking dish and bake at 350°F for about an hour, stirring every 20 minutes, until potatoes are tender.
- Combine the bourbon and pancake syrup.
- Increase the heat in the oven to 450°F. Brush the potatoes with the bourbon/syrup mixture and return to oven until syrup is glazed.
- Stir in butter before serving.
