Vidalia Onion and Cucumber Salad

Vidalia Onion and Cucumber Salad

Toss sliced Vidalia onions and cucumbers with our sweet Vidalia Onion Vinaigrette for a light and delicious side.

Ingredients

1/2 cup Vidalia Onion Vinaigrette
1 cup Vidalia Onion, sliced
1/2 cup Apple Cider Vinegar
2 Tbsp Olive Oil
2 Tbsp Granulated Sugar
2 cups Cucumber, sliced
1/4 cup Fresh Parsley, diced

Directions

  1. In a small bowl, combine onions, vinegar, oil and sugar.  Stir to mix evenly.  Cover and refrigerate until chilled, about 30 minutes.
  2. Combine drained marinated onions with the rest of ingredients and dress with Vidalia Onion Vinaigrette.
