Herring Stuffed Potatoes

Baked potatoes are stuffed with Vita Herring in Sour Cream and cottage cheese and then garnished with sunflower seeds and parsley.

Ingredients
5 oz Vita Herring in Sour Cream, chopped
3 Russet Potatoes, baked
3/4 cup Cottage Cheese
1 TBSP Sunflower Seeds, shelled
1 TBSP Fresh Parsley

Directions
- Preheat oven to 400 degrees and bake potatoes for about 20 minutes.
- Remove herring from jar, keeping any sour cream still on it and chop into smaller pieces.
- Add cottage cheese and herring to mixing bowl, along with sunflower seeds.
- Chop parsley and stir into mixture.
- When potatoes cool, cut a slit in the top and use the opening to stuff with herring filling.
