Smoked Salmon Potato Salad

A creamy potato salad dressed up with smoked salmon, a variety of crisp vegetables and a lemon mayonnaise dressing.

Ingredients
1 package Vita Smoked Salmon
2 cups Potatoes, peeled and diced
2 TBSP Olive Oil
1/2 cup Green Pees
1/2 cup Morel Mushrooms
1/4 cup Red Onion
1 TBSP Chervil, chopped
1 TBSP Garlic, chopped
1 TBSP Lemon Juice
1/2 cup Mayonnaise

Directions
- Place potatoes in a pot of boiling water until tender.
- Cut mushrooms into 1" dice.
- In a saute pan over medium heat, add olive oil, mushrooms, peas and garlic. Cook for 3 minutes.
- Cut salmon into small chunks.
- Mix all ingredients together and refrigerate.
