Nova Scotia Salmon with Brie and Raspberries

Nova Scotia Salmon with Brie and Raspberries

Brie cheese is baked in dough then cooled slightly and served with smoked salmon and raspberry jam.

Serves Up To: 2 Servings
Cook Time: 45 Minutes
Difficulty: Simple


8 oz Wheel of brie
2 sheets Puff pastry
2 Eggs   
3/4 cup Raspberry preserves
for garnish Fresh raspberries
8 oz Jim Beam smoked salmon
1 package Party rye bread


  1. Preheat the oven to 350 degrees F.
  2. Roll out the puff pastry sheets large enough to hold the wheel of brie, and enough excess to fold over the cheese.  Cut the wheel in half horizontally, and spread raspberry preserves onto the cut half, making a sandwich.  
  3. Place the brie wheel in the center of the puff pastry, and fold the excess over the cheese, completely covering it.  
  4. Next, take the second sheet of pastry, and place on top of the brie wheel enclosing it.  Brush the entire top and sides of the pastry with beaten eggs.  Place the brie onto a sheet pan lined with parchment paper, and bake for 30 minutes, or until pastry begins to brown.  
  5. Remove from oven, let cool slightly and serve with smoked salmon slices, raspberry preserves and garnish with fresh raspberries.  Crackers or rye bread can be used.
