Penne Pasta with Vodka and Smoked Salmon

Penne Pasta with Vodka and Smoked Salmon

Serve this dish with fresh Italian bread, Caesar salad and a good bottle of Chianti.

4 oz. Vita Classic Hot Smoked Salmon, cut into ½ inch pieces
12 oz. Penne pasta
2 tbsp Extra Virgin Olive Oil
1 Shallot, thinly sliced
4 Roma tomatoes, seeded and chopped
2/3 cup Whipping cream
1 Pinch ground nutmeg
2 tbsp Fresh dill, chopped
1/3 cup Vodka
to taste Salt and white pepper
Fresh Dill for garnish


  1. Cook pasta according to the directions on the box and drain well.
  2. Oil a large frying pan over medium-low heat.
  3. Add shallot and cook until soft. (About 3 minutes.)
  4. Add chopped tomatoes, cover and simmer for 5 minutes.
  5. Add cream, nutmeg, chopped dill and vodka. Increase heat to high and bring to a full boil.
  6. Boil for 1 minute.
  7. Add pasta to sauce and toss until pasta is heated through.
  8. Remove from heat, add smoked salmon and mix gently.
  9. Season to taste with salt and white pepper and garnish with dill.
