Penne Pasta with Vodka and Smoked Salmon

Serve this dish with fresh Italian bread, Caesar salad and a good bottle of Chianti.

Ingredients
4 oz. Vita Classic Hot Smoked Salmon, cut into ½ inch pieces
12 oz. Penne pasta
2 tbsp Extra Virgin Olive Oil
1 Shallot, thinly sliced
4 Roma tomatoes, seeded and chopped
2/3 cup Whipping cream
1 Pinch ground nutmeg
2 tbsp Fresh dill, chopped
1/3 cup Vodka
to taste Salt and white pepper
Fresh Dill for garnish

Directions
- Cook pasta according to the directions on the box and drain well.
- Oil a large frying pan over medium-low heat.
- Add shallot and cook until soft. (About 3 minutes.)
- Add chopped tomatoes, cover and simmer for 5 minutes.
- Add cream, nutmeg, chopped dill and vodka. Increase heat to high and bring to a full boil.
- Boil for 1 minute.
- Add pasta to sauce and toss until pasta is heated through.
- Remove from heat, add smoked salmon and mix gently.
- Season to taste with salt and white pepper and garnish with dill.
