Smoked Wild Sockeye Salmon with Mushrooms

Mushrooms are filled with a blend of cheese, sockeye salmon, bread crumbs, and seasonings then, baked in mushroom caps.

Ingredients

4 oz Vita Gold Sockeye Salmon
4 large Portabella Mushroom Caps
1/4 cup Ricotta Cheese
1/4 cup Cream Cheese
1/4 cup Mozzarella Cheese, shredded
2 tsp Sage, fresh chopped
1/4 cup Bread Crumbs, toasted
to taste Salt and Pepper

Directions

  1. Combine ricotta, cream cheese, mozzarella, Vita Gold Sockeye Salmon, sage, and bread crumbs into a paste and season with salt and pepper.
  2. Distribute the paste among the portabella caps and bake at 350°F for 10-15 minutes or until filling begins to brown.
  3. Serve while still hot.
