White Wine Herring Crepes

Crepes filled with our delicious wine herring, cream cheese and pimentos.
Serves Up To: 2 Servings

Ingredients
1 cup All Purpose Flour
2 each Eggs
1/2 cup Milk
1/2 cup Water
1/4 tsp Salt
2 Tbsp Butter, melted
1 jar Vita Wine herring
8 oz Cream cheese
2 Tbsp Pimentos, minced

Directions
- Whisk together the eggs, milk, water, salt, and melted butter, and then add the mixture to the AP flour and stir to combine.
- Pour 2 oz of this batter into a skillet over medium-high heat and flip the crepe after 20 seconds. Continue to cook for an additional 20 seconds, just until the crepe begins to brown. Remove from skillet and cool.
- In a small work bowl, fold together the cream cheese, pimentos, and wine herring.
- Fill the crepes with the herring mixture and fold into quarters. Serve cold.
