Pickled Herring Bruschetta
This yummy new appetizer is a blend of fresh tomatoes, garlic, pickled herring and basil served with grilled Italian bread.
Serves Up To: 4 Servings
Cook Time: 10 Minutes
1 cup Roma tomatoes, peeled, seeded, diced
6 each Garlic cloves, roasted, minced
1-8 oz jar Vita Pickled herring, chopped
2 Tbsp Basil, fresh, chopped
to taste Salt and pepper
8 each Sourdough bread, ½” slices
1 Tbsp + 2 oz Extra virgin olive oil
- Combine roma tomatoes, garlic, herring, basil, and extra virgin olive oil. Season to taste with salt and pepper.
- Brush the remaining olive oil on the sliced bread and grill them before serving with chilled bruschetta mixture.
