Herring in Sour Cream Ravioli

Ravioli teams up with herring for a creamy, cheesy pasta.

Ingredients
1 cup Ricotta Cheese
4 Tbsp + 1/2 cup Sundried tomato, chopped
2 Tbsp Lemon juice
1 jar Vita Pickled herring in sour cream
to taste Salt and pepper
1 lb Pasta dough
1 each Egg, lightly beaten
1/4 cup Pine nuts
1/2 cup Extra Virgin Olive Oil

Directions
- In a small work bowl, mix together the ricotta cheese, 2 Tbsp of sun dried tomatoes, lemon juice, and herring in sour cream and season with salt and pepper.
- Using a pasta roller, roll the dough out to the #7 setting. Lay the pasta flat and cut out 5” rounds.
- Lay out about a ¼ cup of filling in each round, then seal with beaten egg and
- Cook the ravioli for 1-2 minutes in boiling salted water.
- Combine pine nuts, remaining sundried tomatoes, and extra virgin olive oil and spoon over the ravioli before serving. Garnish with a lemon wedge.
