Wine Herring Wrap

Tortilla is filled with dilled herring, blanched asparagus, cream cheese and diced tomatoes and is wrapped together.

Ingredients
2 cup Vita Herring in Wine
8 Flour Tortillas
24 sticks Asparagus
1 cup Cream Cheese
1/2 cup Diced Tomato

Directions
- Boil asparagus at medium heat for 4 minutes.
- Take them out of the hot water and put into an ice water bath.
- Lay your tortillas out and spread about 1 1/2 Tbsp of cream cheese across each tortilla.
- Dice up your tomatoes and evenly distribute them to each tortilla, placing them slightly off from the center of the tortilla in a line shape.
- Next, place 1/4 cup of dilled herring on top of the tomatoes.
- Take three asparagus sticks and lay them long ways with the tomatoes and herring.
- Sprinkle with salt and pepper.
- Roll the tortillas over the filling and make it into a wrap tightly.
- Refrigerate and cut in half diagonally when serving.
