Jim Beam Herbed Mustard Lamb Rack

Combine Original Mustard with chopped rosemary and thyme and mix with panko bread crumbs to form a crust. Then press it into lamb chops or a whole lamb rack before roasting.

Ingredients
12 oz Jim Beam Original Mustard
1/2 cup Panko bread crumbs
2 oz Rosemary, fresh, chopped
2 oz Thyme, fresh, chopped
2 whole Lamb racks, frenched
to taste Salt and Pepper

Directions
- Preheat oven to 375°F.
- Trim excess fat from lamb racks and season with salt and pepper.
- Combine Jim Beam Original Mustard with chopped fresh herbs and panko bread crumbs and allow to sit for 10-15 minutes so that bread crumbs can absorb some moisture and form a paste.
- Press the bread crumb mixture into the flesh of the lamb rack and place in roasting pan so that the rib bones of the two racks hold each other up.
- Place in preheated oven and roast until thickest part of lamb rack internally reads 145°F. Allow to rest for 10 minutes before slicing.
