Jim Beam Herbed Mustard Lamb Rack

Combine Original Mustard with chopped rosemary and thyme and mix with panko bread crumbs to form a crust. Then press it into lamb chops or a whole lamb rack before roasting.

Ingredients

12 oz Jim Beam Original Mustard
1/2 cup Panko bread crumbs
2 oz Rosemary, fresh, chopped
2 oz Thyme, fresh, chopped
2 whole Lamb racks, frenched
to taste Salt and Pepper

Directions

  1. Preheat oven to 375°F.
  2. Trim excess fat from lamb racks and season with salt and pepper.
  3. Combine Jim Beam Original Mustard with chopped fresh herbs and panko bread crumbs and allow to sit for 10-15 minutes so that bread crumbs can absorb some moisture and form a   paste.
  4. Press the bread crumb mixture into the flesh of the lamb rack and place in roasting pan so   that the rib bones of the two racks hold each other up.
  5. Place in preheated oven and roast until thickest part of lamb rack internally reads 145°F.   Allow to rest for 10 minutes before slicing.
